The Marsanne grapes were sourced from Wattle Glen Vineyard. The vineyard is a small, one acre block of unirrigated vines located in Mount Evelyn, Yarra Valley. The vines were planted in 1994 and benefit from the cooler nature of the "Upper" Yarra Valley.
This is a special release wine. Only 200 half-bottles were made using an uncommon technique called “Freeze Distillation”. The grapes were picked at the end of the harvest period, where the aim was to increase the sugar level in the grapes from the extended ripening. Upon being picked, the grapes were pressed and the resultant juice was transferred to a chest freezer where the water component in the juice was frozen to ice and then was physically removed in order to concentrate the remaining liquid sugar. The result is a concentrated sugar solution which was then allowed to ferment naturally for over 1 year with no other inputs.
This wine was hand bottled in August 2019. It is unfiltered and unfined.

The wine has a golden appearance.
On the nose, there are notes of toffee apple, lemon meringue and toasted almond. There are also tones of honeydew and hints of stewed apricot.
The palate is complex but balanced where lemon curd and crème Brûlée play a role alongside fleshy white peach tones. The finish is long with lemon, stewed apricot, white pepper and nutmeg spice.
A wonderful wine to finish the night, to best enjoy this wine serve it chilled with an apple tarte tatin and vanilla ice-cream. A vegan friendly food match would be fig leaf panna cotta, walnut praline with fresh figs.
