From small organic and low-input vineyards around the Yarra Valley and nearby high-altitude sites. Clean fruit, grown simply.

Wild ferment and leave it alone

The natural yeasts get to work. No additions. No corrections. No polishing. Just slow, honest fermentation.

Bottle it without touching it

No sulphur, no filtering, no fining. Straight from barrel or tank into bottle. The wine stays as it was made.

Wild Dreams isn’t made from one set recipe each year. Stu tastes what’s fermenting, follows what feels good, and blends from instinct. That’s why no two vintages are ever the same, and why these wines always have a little spark to them.
