2020 Mèthode Ancestrale Sparkling Rosé
From a small block of 25 year-old Syrah vines in Silvan, Yarra Valley. Unirrigated and organically farmed, grown by yours truly. Iso-hand picked on 16th April at perfect sparkling ripness and acidity. The grapes were gently pressed and left to naturally ferment for 11 weeks before bottling at just the right time to allow the ferment to finish in bottle. Disgorged after 14 weeks on lees with some light sediment remaining, but not a lot. Made with no additions, just pure fermented grape juice.
