From a small block of unirrigated 25+ year-old Syrah vines in Silvan, Yarra Valley. The vineyard is 290m above sea level and is farmed entirely by yours truly. Hand-picked on the 8th April at perfect sparkling ripeness and acidity.
The grapes were gently pressed and left to naturally ferment for 10 weeks before being bottled at just the right time to allow the ferment to finish in bottle. This wine is not disgorged and there is sediment remaining.
Made with no additions, just pure fermented grape juice. Best advice for opening is to chill-well, standing up and have a glass handy to catch the latent gush. It's a Pet Nat, go have some fun with it!
